SHALLOT VINAIGRETTE

Fresh salad leaves from the garden, a handful of fresh herbs and the perfect salad dressing. Eat it up!

Ingredients

½ cup cider vinegar*

1 Tbsp roughly chopped shallots

½ Tbsp roughly chopped garlic  

2 tsp Dijon mustard*

2 Tbsp sugar*

1 cup canola oil*

¼ cup extra virgin olive oil*

Sea salt and freshly ground black pepper*

Method

In a small saucepan place the vinegar, shallots, garlic, mustard and sugar. Place on the heat and bring to the boil. Remove from the heat and using a wand blender or liquidiser blend on a high speed and slowly drizzle in the oils until thick & emulsified.

Season generously with sea salt and black pepper.

Refrigerate.

Use on anything you can imagine!
