Sushi is really easy to make, especially with premade seasoning so readily available. If you are looking for a vegetarian option try avocado, cucumber and lettuce, Sprinkle some black and white sesame seeds on the top to look like a true professional.
for the teriyaki chicken
8 boneless chicken thighs, cut into strips
⅓ cup mirin*
⅓ cup sake*
⅓ cup soy sauce*
35g brown sugar
For the sushi rice
1 cup sushi rice*
2 cups water*
3 Tbsp sushi seasoning*

Mix all ingredients except the chicken in a small pot and bring to the boil.
Reduce heat to medium and simmer for two minutes. Add the chicken strips and simmer until the chicken is cooked through.
For the rice:
Put the rice and water in a pot. Bring to the boil and then reduce the heat to a simmer with the lid on for eight minutes.
When cooked tip into a bowl, add the sushi seasoning and mix well.
