SALSA VERDE

Perfect with fresh fish from Little Fish Co.

Ingredients

2 cloves garlic

¼ cup capers*

¼ cup pickled gherkins*

2 anchovy fillets*

2 large handfuls of flat leaf parsley

1 bunch fresh basil*

1 small handful fresh mint*

1 Tbsp Dijon mustard*

3 Tbsp good quality wine vinegar*

120 ml good quality olive oil*

Salt and freshly ground black pepper*

Method

Place all of the ingredients into a food processor and pulse to a green sauce consistency. Spoon over grilled fish.
