This fresh pasta salad recipe is designed to feed a family, cut back on ingredients if you are only cooking for one or two.


300g Ligouri Semi de Melone pasta  

½  red onion, finely chopped  

½ cucumber, diced*

100g feta, crumbled*

1 large handful of fresh soft herbs, chopped  

2 Tbsp extra virgin olive oil  

2 Tbsp pesto

Zest and juice of one lemon  

Salt and pepper to taste*

Bring a large pan of salted water to the boil. 

Cook pasta until al dente, drain and run under cold water to cool. Put the pasta into a bowl. 

Add the other salad ingredients and gently toss.
