LEMON CURD

Lemon curd is very versatile. Spread on toast or add to a sweet party case and top with a fresh strawberry for a little sweet treat when entertaining.

Ingredients

4 egg yolks 

2/3 sugar*

Zest 1 lemon 

Juice 3 lemons 

Pinch salt*

6 Tbsp unsalted butter at room temperature*

Method

Combine all ingredients in a microwave bowl. Cook on full power for one minute then stir, repeat the process until the lemon curd is the lemon curd is thick enough to coat the back of a spoon, usually three to five minutes.  

Push the curd through a sieve to make sure there are no lumps. Poor into a sterile jar. Refrigerate until required.
