FRUIT CARPACCIO

Ingredients

1 pineapple, cored and very finely sliced*

Any other fresh and watery fruit such as strawberries, melon, peaches, etc

A handful basil leaves roughly chopped

A handful mint leaves roughly chopped*

3 Tbsp caster sugar*

Method

Peel and slice fruit.

Arrange slices of fruit on a large serving plate.

Place the chopped mint into a mortar with half the sugar. Using the pestle grind down the leaves with the sugar until the sugar turns green. Place in a bowl.

Repeat the process with the basil and the remaining sugar.

Sprinkle the sugars over the fruit. The mint for example will go very well pineapple and the basil with strawberries.
