CORN AND BUCKWHEAT FRITTERS

Serve these corn and buckwheat fritters with crumbled feta cheese and a side salad.

Ingredients

1 can creamed corn*

1 Tbsp coriander seeds*

1/2 Tbsp cumin seeds*

2 Tbsp whole buckwheat*

2 eggs

2 spring onions, finely sliced

2 red chillies, finely chopped

Salt and pepper to taste*

Method

Toast the cumin and coriander seeds in a pan. Grind in a mortar and pestle.

Mix all ingredients in a bowl. Take a tablespoon of the mixture and form into a small patty, fry in a little olive oil. 

Serve with crumbled feta and a side salad.
