Orange and mustard ham glaze.
One whole or half ham*
Handful of cloves*
Juice of two oranges
1/3 cup brown sugar*
4 Tbsp wholegrain mustard*
4 Tbsp honey*

Preheat the oven to 180 degrees.
Trim the fat off the ham, scour a diamond pattern with a sharp knife. Stud the diamond points with whole cloves.
Line a baking tray with several layers of baking paper.
To make the glaze place the orange juice, sugar, mustard and honey in a saucepan and stir until the sugar has dissolved, simmer for 15 minutes.
Baste the ham with a third of the glaze, bake for 10 minutes, baste again, bake for another 10 minutes. Repeat until the ham starts to darken at the edges of the diamond pattern.
Remove from the oven and serve hot or cold.
