BAKED EGGPLANT WITH FETA

Serve this amazing baked eggplant and feta dip with meat, fish, or crusty bread.

Ingredients

1 eggplant

Salt*

1 tin chopped tomatoes 

100g feta*

Method

Slice eggplant, place slices on baking paper, sprinkle with salt. Leave a for a few moments, pat dry.  Gentle fry the slices and place in a baking dish. 
Pour the tomato over the top. Sprinkle with feta. Bake at 180 degrees for 35 minutes.
